This is a typical recipe from English speaking countries.  However, it gained fame and managed to reach many other parts of the world. This is no surprise, as it is really delicious.

Ingredients

  • 350 g of carrots
  • 250 g of flour
  • 4 eggs
  • 120 g of sugar
  • 150 g of brown sugar
  • 250 ml of oil
  • 1 tablespoon of cinnamon
  • 1 pinch of salt
  • 2 tablespoons of yeast

To the roof

  • 800 grams of cream cheese
  • 140 grams of icing sugar

Method of preparation

  • First, wash the carrots well, peel and grate them. Preheat the oven to 180º.
  • Then mix the flour, salt, cinnamon and yeast in a bowl. Remember to sift the flour.
  • In another bowl, beat and mix the sugars, white and brown, with the eggs until they dissolve well.
  • Afterwards, gradually add the flour to the bowl and beat very well with an electric mixer until a smooth mixture is obtained.
  • Then  add the grated carrots and stir so that they are well incorporated into the mixture.
  • Now, it’s the oil’s turn: let’s pour it little by little into the mixture, mixing it so that it blends perfectly.
  • Then grease a mold and pour the mixture into it. Place in preheated oven at 180º for 45 minutes.
  • Ideally, the container or shape should be about 20 cm in diameter. This way, the resulting cake will be tall, which will be useful later as it will be cut into two halves.
  • When the necessary time has passed, remove the cake from the oven and allow it to cool.
  • Meanwhile, prepare the coverage. To do this, just mix the icing sugar well with the cream cheese.
  • When the cake is cold, cut it in half horizontally. In one of the halves, put half of the icing and then the other half of the cake.
  • Finally, cover the cake with the remaining icing. Place in refrigerator to cool before serving.

Carrot Cake With Coverage
This cake also has a vegan option and an extra dose of healthy nutrients like those provided by ginger.

Ingredients

  • 300 grams of whole wheat flour
  • 270 g of brown sugar
  • 300 g of carrots
  • 200 ml of water
  • 180 g of sunflower oil or olive oil
  • 1 pinch of salt
  • Cinnamon
  • 1 vial of vanilla
  • A pinch of powdered ginger
  • 1 small teaspoon of baking powder

Method of preparation

  • First of all, wash and grate the carrots well. Also,  preheat the oven to 180º.
  • Sift the flour into a bowl and add the sugar, salt, yeast, cinnamon and powdered ginger, ie all powdered ingredients except vanilla. So mix everything together very well.
  • In another bowl, add water, oil, vanilla and mix well.
  • Then add the contents of the first bowl, little by little and stirring constantly to obtain a homogeneous and even mixture.
  • Then grease a baking sheet and pour the mixture into it. Then bake for about 40 to 45 minutes.
  • Finally, when the cake is ready, let it cool.
  • Now you can enjoy your vegan carrot cake!
