Basic recipe for leek cream with asparagus

The first recipe will be a basic version of a leek and asparagus cream. To prepare it, we will need the following ingredients:

  • 20 units of leeks (1 kg)
  • Olive oil (to taste)
  • 500 g potatoes
  • 24 peeled green asparagus (240 g)
  • 12 slices of white or wholemeal bread
  • salt to taste

Preparation

  • First, clean the leeks thoroughly, washing them under running water to remove all traces of pesticide and soil.
  • Meanwhile, bring water to a boil in a pan and,
  • Finally, as soon as it comes to the boil, add the sliced ​​leeks with the peeled and sliced ​​potatoes.

  • 8 green asparagus sprouts (80 g)
  • 200g of smoked salmon
  • salt to taste

Preparation

  • First, wash the leeks, similar to the first step in the previous recipe.
  • Then, saute the leeks, together with the asparagus sprouts, in a medium pan, with all the other ingredients cut into slices.
  • Once browned, set aside some asparagus to serve as a garnish, and add the potatoes. Before that, peel and cut the potatoes into small cubes.
  • Finally, heat the mixture for a few minutes, then cover everything with water, covering the vegetables in about two fingers. Wait until the water starts to boil and let everything cook for about 20 minutes.
