Stir-fried noodles with oysters and crayfish

Ingredients

  • 16 crayfish
  • 200 grams of oysters
  • 2 cups of thin noodles (200 g)
  • ¾ cup of green beans (80 g)
  • 1 carrot
  • 1 red onion
  • 2 saffron strands
  • Parsley
  • Olive oil
  • salt

Preparation

  1. To remove impurities, soak the oysters for half an hour in salted water.
  2. Peel the crawfish, and remove the intestines. Saute the heads and shells in two tablespoons of olive oil for three minutes.
  3. Add the saffron strands and salt. Cover with enough water, and cook for five minutes. Reserve the rest of the crayfish.
  4. Strain the crayfish broth, and return the liquid to the fire.
  5. Cook the pasta for six minutes. Remove from heat, cover the pan and let it sit for five minutes. Reserve.
  6. Peel the onion and carrots and cut into small pieces. Cut the beans into thin strips.
  7. In another pan, saute all vegetables for three minutes.
  8. Add the reserved crayfish, and the rinsed and drained oysters.
  9. Saute for another two minutes, until the oysters open up.
  10. Add pasta and parsley, and stir until all ingredients are well integrated.

Spaghetti with crayfish and oysters

Ingredients

  • 180 grams of spaghetti or any other pasta
  • 250 grams of raw crayfish
  • 250 grams of oysters
  • 3 ripe tomatoes
  • 1 onion
  • 2 garlic cloves
  • 1 leek
  • 1 celery
  • Fresh chopped parsley, or basil
  • 1 chilli pepper
  • 4 cups of fish broth (1 liter)
  • 1 fish head
  • 1 pinch of salt
  • Oregano to taste
  • 1 pinch of black pepper
  • Olive oil

Preparation

  1. In a bowl, place the oysters with water and salt, to remove the dirt.
  2. After peeling the crayfish, saute the heads and shells in a little oil. The rest is reserved.
  3. Wash thoroughly and cut the onion, celery, and leeks into small pieces. Also some fresh parsley leaves, and add to the sauté of the crayfish heads.
  4. Incorporate the fish head and cover with water.
  5. Season and simmer for 30 minutes while the foam that comes out when boiling is removed. Strain and set aside the broth, with which the pasta will be cooked.
  6. In another pan, fry the garlic cloves.
  7. Add the peeled crayfish, and add the tomatoes cut into small pieces. Saute with a little oil for a few minutes, and add a little water for better cooking.
  8. Add salt and oregano to the stew, and let it reduce.
  9. Once strained, the oysters are placed in the pan. Cover and boil until they open.
  10. With the broth set aside, cook the pasta until just enough.
  11. Strain the noodles, and add the crawfish stew, with a little broth.
  12. Sprinkle the parsley or chopped basil.
  13. Serve in deep dishes with plenty of sauce.

Pasta with shrimp and clams

Ingredients

  • 250 grams of clams
  • 200 grams of shrimp
  • 250 grams of noodles
  • a potato
  • a clove of garlic
  • a medium onion
  • three green peppers
  • a red pepper
  • Fish soup
  • Saffron
  • Olive oil
  • bay leaves
  • A bit of salt

Preparation

  1. Cut the green peppers and onion into small pieces, and saute.
  2. Wash the clams well, add them to the onion and pepper sauce, and sauté them until they open. Reserve.
  3. In a casserole, sauté the shrimp with a little oil and a garlic clove in fillets.
  4. Add the saffron when the shrimp turn pink. Add bay leaf and pinch of salt.
  5. Pour in the fish stock, and the potato cut into slices.
  6. Add the stew with the clams you had reserved, the peppers cut into small pieces, and the pasta.
  7. Cook over low heat until the noodles are done.
  8. Check the salt.
